Lemon Bugs and Giant LEGO Gingerbread Man! (+Recipe)

One of Our Summer Friday Afternoon Bakes: 

Finally Unveiling the Giant LEGO Man!

This silicone cake mold has quickly become one of my favorites (right after the life-sized LEGO figure ice cube tray, which we also used to make the birthday chocolate LEGO figures). I can almost smell the lemony cake batter, which is perfect on any summer day paired with homemade black forest lemonade!

What you’ll need:

  • A little boy eager to bake
  • 175 g sugar
  • 175 g soft margarine
  • 1 vanilla bean
  • 3 eggs
  • 225 g flour
  • 2.5 tsp baking powder
  • Flavoring (in our case: grated lemon zest and juice, but cinnamon, chocolate chips, etc. work too!)

How to make it:

Beat the margarine and sugar until fluffy, then add the vanilla and eggs and continue mixing. Combine the flour with the baking powder and your chosen flavoring, then gently fold into the wet mixture. Bake at 190°C (375°F) until a skewer comes out clean—about 30 minutes, depending on your mold.

This is a foolproof batter perfect for baking with kids, who can confidently spread their wings in the kitchen because the result is simply destined for success. Since the batter itself isn’t a culinary adventure, the molds bring the dessert to life! We skipped decorating this time due to an unmissable soccer match (where the lemon bugs were packed as snacks). The possibilities for shapes and decorations are endless, making it a truly fun experience!
